Zelante

Our sparkling wine Zelante was the first wine we made with the white variety viognier. It is not commonly used in sparkling wines, but we tried it and loved it. It is produced in an artisanal way and in limited editions, and elaborated with the Champagne method: it starts with a first fermentation in tank and then a second fermentation in bottle, where the natural bubbles that we enjoy while we drink are produced. It is aged on the lees for at least nine months. With no added sugar, it is classified as brut nature. It can accompany falafel dishes, croquettes, fresh cheese, rabas and seafood.
